How Things Are Going...

So I have been on the Fodmap Diet for about 3 days now. Things are going well and I have noticed a real improvement in my tummy and my bloating. It is now much better and the pain is bearable. 

Fodmaps are a sort of carbohydrate found in some foods and the diet means that you limit the consumption of these; fructose, lactose, fructans, galactans and polyols. I am specifically using the diet to treat my IBS symptoms.

I have found this website about it, incredibly useful as it details foods that you can and cannot eat when participating in the diet. I plan on sticking to the diet for about a fortnight and then hopefully I will be ok to eat more normally again as I am using it as a form of detox.

My first dinner consisted of Salmon with New Potatoes and Salad.

I spread the fillet of salmon with pesto and sprinkled on bread crumbs and grated Parmesan before baking it in the oven for about 20 minutes.
I then boiled the new potatoes.
And formulated the salad which consisted of; lettuce, coriander, beetroot, cucumber, cherry tomatoes and red pepper. I then sprinkled pine nuts over it and drizzled  it with balsamic vinegar.


My second dinner was a little more adventurous. 

I made Thai Tuna Fishcakes with Cous Cous and Salad.

I made the salad as before but cut up a gherkin to go on top.
I bought a packet mix of Ainsley Harriot's cous cous which was yummy.
And I made the fishcakes by putting, a tin of tuna, bunch of coriander, 1/4 of a red pepper and 1/2 a red chilli in my mini chopper with a drop of fish sauce. I then moulded the fish cakes in my hands and squished it all together to form 5 patties. Unfortunately I put a little too much oil in the pan so 2 crumbled but the others fried well and were very tasty.


Last Nights Dinner was made in order to use up the leftover Cous Cous.

I cooked stuffed roasted peppers and cooked a few new potatoes for the side.

I roasted the peppers in the oven for about 20 minutes before stuffing them with my cous cous mix. This consisted of feta, cherry tomatoes, coriander. The stuffed peppers were then popped back in the oven to be baked for about 10 more minutes.


I can't believe the immediate changes that have already occurred thanks to my diet and am really pleased.
Hopefully I will be OK now for my trip to Dublin!
